I have this problem- occasionally I'll decide that spaghetti and meatballs sounds like a good dinner option. Then I'll buy a bag of meatballs- often a giant bag, since those are usually on sale, and will use 4-6 of the meatballs for dinner. Then the rest sit in my freezer and get slowly freezer burned.
So I was really excited to get to review a wonderful little cookbook called "101 Things To Do With Meatballs". This cookbook is designed for use with Casa di Bertacchi meatballs, which are available at Sam's Club. I, unfortunately, am not a member of any shopping clubs, so couldn't purchase this particular brand. But I used the cookbook with some meatballs that I had on hand, and was very impressed!
The cookbook is divided up into sections. These include: appetizers and sides; soup, stews and chili; sandwiches, wraps and more; dressed-up meatballs; pasta dinners; dinners with rice; and family favorites. Each section has an impressive array of recipes in it, so it was hard to decide where to start!
Eventually I settled on the Chinese Beef Noodle Soup, since I had all of the ingredients on hand. The recipe was simple and easy to follow- even for someone like me who is not much of a cook. Both Daniel and I really liked this soup- it's going on my list of things to make again, for sure. I also really liked that this cookbook is spiral bound, so it lies neatly on my counter and is easy to read while cooking.
